So in my quest to have a treat while trying to loose weight my trainer and i came up with a wholesome natural nut snack that while high in fat, is high in the good fats and as they say – everything in moderation (i really should listen to this advice!!) It really was a nice treat – not too sweet, just right for a little after dinner naughty!
Nut Bars
Stuff you’ll need
- 250grms mixed nuts unsalted
- 100grms sesame seeds
- 1/4 cup almond meal
- 1/4 cup flax meal
- 1/2 cup dessicated coconut
- 1/4 – 1/2 cup organic peanut butter (the one with no added stuff! I bought one where the ingredients were just peanuts…)
- 1/4 – 1/2 cup honey
How i did it
This is a nice and easy one! Simply put the nuts and sesame seeds onto a roasting tray and roast them in a hot oven for about 20-25 minutes checking and tossing every 5 minutes until they are golden brown. 
Cool them slightly then roughly chop them & remove any husks if there are any on any of your nuts. Place in a bowl with the almond and flax meal as well as the coconut. Place the honey and peanut butter into a seperate bowl and heat in the microwave for about 30-45 seconds, stir to combine then pour into the nut mix. Sir the nut mix until well combined and not dry, you may need to add more of the peanut butter / honey mix, the nuts should be moist and able to be pressed down into a slice tin so they stick together. Once you have the right consistancy place the mix into a lined slice tin and press down.
Set in the fridge for a couple of hours…
Wam bam thank you mam… A healthy alternative to biscuits… minus the wheat!
