The Best Favours in the WORLD!

So its been a long time coming, and many a people have asked me about the recipe i used, soooooo here it is!

THE best recipe for coconut ice, and the PERFECT favours gift… Cheap, pretty and you can make it to suit any colour that fits in your theme, in fact – i will be making some more for a baby shower this coming weekend! Oh and its really easy to cut and wrap up – takes no time at all!

Stuff you’ll need

  • 125g copha
  • 250g desiccated coconut
  • 500g pure icing sugar, sifted
  • 2 egg whites, lightly whisked
  • 1/2 tsp vanilla extract
  • 3 drops red liquid food colouring (or any colour of your liking)

How i did it
Line a square 20cm (base measurement) cake pan with non-stick baking paper, allowing it to overhang the sides. Melt the copha in a small saucepan over low heat. Remove from heat and set aside for 10 minutes or until cooled to room temperature.

Combine the coconut and icing sugar in a large bowl. Add the copha, egg white and vanilla extract, and stir until well combined. Divide coconut mixture in half. Press half the coconut mixture over the base of the prepared pan.

Add the red food colouring to the remaining coconut mixture and stir until well combined and evenly coloured. Spread the pink coconut mixture over the mixture in the pan and smooth the surface. Cover with plastic wrap and place in the fridge for 1 hour or until set.

Remove the coconut ice from the pan. Use a sharp knife to cut into 16 small squares to serve.

Cupcake Heaven

Moist and fruity, sweet but not too sweet…

Georges birthday cupcakes were based on the Pink Lady Cake by Smitten Kitchen… However i adapted it ever so slightly and turned them into cupcakes as i had bought these oh so cute holders that i just HAD to use!

While cupcakes are not really my thing – dont ask me why, i love a good cake but as soon as you turn it into a cupcake – meh, i’ve lost interest for some strange reason, but anywho, these little sweeties were just perfect and with the cream cheese frosting pipped on top – oh nomnomnom!

Stuff you’ll need

  • 4 1/2 cups cake flour
  • 3 cups sugar
  • 5 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 340grams unsalted butter, at room temperature
  • 1 1/2 cups frozen raspberries
  • 8 egg whites
  • 2/3 cup butter milk
  • approx 650grams cream cheese, softened
  • 3/4 cupunsalted butter, softened
  • 3 cups sifted confectioners’ sugar
  • 2 teaspoons vanilla extract

How i did it

Make the cake
Preheat the oven to 180deg. Grease the cupcake holders.

Put the flour, sugar, baking powder, and salt in a large mixer bowl. With the electric mixer on low speed, blend for 30 seconds. Add the butter and raspberries and mix to blend the ingredients. Raise the speed to medium and beat until light and fluffy, 2 to 3 minutes; the batter will resemble strawberry ice cream at this point.

In another large bowl, whisk together the egg whites, milk  to blend. Add the whites to the batter in two or three additions, scraping down the sides of the bowl well and mixing only to incorporate after each addition. Divide the batter among the cupcake holders.

Bake the cakes for 15-20minutes, or until a cake tester or wooden toothpick inserted into the center comes out clean. Let stand until completely cooled before icing – i left mine over night in the fridge

Make the cream cheese frosting
In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Pipe onto cupcakes and sprinkle with some fairy sprinkles.

And…. Enjoy!

Cookies Slice

Who doesnt like cookies? Well if you are reading this and you do then there is something SERIOUSLY wrong with you and i want you to go to the doctor like… NOW! Anywho, when i found this recipe i thought it sounded just devine!

I did also think it would be a lot softer and more like brownies (cause thats what the picture looks like), but as it seems either i have a really hot oven and they needed less cooking time, or it is just THE BEST cookies slice recipe eva!

Stuff You’ll Need

  • 2 3/4 cup plain flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup butter, softened
  • 450 grams brown sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 375 gram package milk chocolate chips

How i did it

Sift flour, baking powder and salt into a large bowl. Set aside.  Stir brown sugar into softened (not melted) butter in another large bowl until butter disappears. You can use the back of your spoon to help incorporate the two together. 

Add eggs one at a time to butter mixture and stir well after each egg.  Add vanilla, chocolate chips and nuts. Mix well.  Add dry flour mixture and stir until well combined. (oh and when it says the mixture will be thick… The mixture WILL BE THICK, so my advise… Use a thick spoon – otherwise your spoon will end up broken like mine!)

(oh and if your on a diet, make sure you dont weigh yourself for about a year after you have eaten this, my lord there is A LOT of sugar in it!) Coat a 13 X 9 pan with non-stick spray and spread batter evenly into dish.  Bake at 180 degrees cel for 30 minutes or until top is golden brown. Make sure you don’t over bake.  (see it says dont over bake, but i did, never mind it still tasted awesome, just more crunchy than soft!)

Raspberry Lattice Slice

Apparently its an old favorite that i hadnt heard of – probably because i dont like cheese cake, which is weird because i love cheese, and i love cake… Humph, never mind, i made this one for my husband so that he had something he would enjoy at the party, oh and i know his family all likes this sort of thing too… :)

Stuff You’ll Need

  • 1/2 cup lemon juice
  • 2 packets of lattice biscuits, trimmed to fit pan
  • 395ml can of condensed milk
  • 5 teaspoons of gelatine mixed into 1/4 cup boiling water
  • 500grams softened cream cheese
  • approx 1 cup of frozen raspberries (or fresh, but the frozen are cheaper)

How i did it

I placed and trimmed the biscuits to fit the bottom of a linned tin.

Beat the cream cheese until soft and smooth, add in the condensed milk and lemon juice and beat again until smooth, add the gelatine mix and if like me you are having a pink fairy party – add a few drops of pink colour, then mix in the berries.

Smooth the mixture over the biscuits in the tin, then place a layer of trimmed to fit biscuits on top.  Place in the fridge until set. ENJOY!

orrrrrrrrrrr…. If your like me and decide that the peices are just too big to serve at a kids party…..

Pull apart. grind biscuits into crumbs, add some melted butter, squish into mini patty pans then pipe the cheese cake mixture into the mini patty pans… VWALLLA…

Mini Cheesecakes suitable for a kids party!! Much more serve-able than the original slice!

 

Rhubarb Jam Short Bread Slice

Let me just say that this one is TO DIE FOR! Even more than the chocolate lucy cake i made

Rhubarb short bread… What could be better right? One of my guests compared it to a little bit of a crumb cake without the cake… Im not sure if it is, but whatever the case it is addictive, and i have to warm you that eating copious amounts will not only make you sick on the day, but it will make you feel soo so sick the day after… So maybe keep the dough eating and the bisuit eating to just a few ;)

To begin i thought seeing i was making everything ‘from scratch’ i would give this jam making business a go as well! So this recipe is in two steps, first the rhubarb jam, then the shortbread.

Rhubarb Jam

Stuff you’ll need

  • 500 grams rhubarb (i also added some strawberries)
  • 500 grams sugar
  • 1 lemon

How i did it

Dice the rhubarb into even portions. Use the rind and juice from the lemon and place in the bowl with the fruit and the sugar. Cover and let sit overnight, siring occasionally.  The next day place the saucepan uncovered on the heat and bring to the boil, turn the heat down and let bubble for about 1/2 an hour or until the jam coats the back of a spoon…  Pour into a warm glass jar and let cool before placing in the fridge…

Shortbread Slice

Once again the recipe came from Smitten Kitchen (yes i may just be a little obsessed at the moment)…

Stuff you’ll need

  • 450 grams unsalted butter, slightly softened
  • 4 egg yolks
  • 2 cups white sugar
  • 4 cups plain flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup of your homemade rhubarb jam, at room temperature (or if you cant be bothered i guess any store bought jam would be ok..)

How i did it

Cream the butter until soft, add the egg yolks and mix well.

Mix the granulated sugar, flour, baking powder, and salt together. Add to the butter and egg yolk mixture and mix just until incorporated and the dough starts to come together. Turn the dough out onto a floured work surface and form into two balls. Wrap each ball in plastic wrap and freeze at least 2 hours or overnight (or as long as a month, if you like).

Heat the oven to 180 degrees cel

Remove one ball of dough from the freezer and coarsely grate it, the place the grated dough into the bottom of a 9×13-inch baking pan (lined of course). Make sure the surface is covered evenly with shreds of dough.

With a piping bag with a wide tip or a zip-lock bag with the corner cut off, squeeze the jam over the surface as evenly as possible, to within 1/2 inch of the edge all the way around. Remove the remaining dough from the freezer and coarsely grate it over the entire surface.

Bake until lightly golden brown and the center no longer wiggles, 30 minutes.

Cool on a wire rack, then cut in the pan with a serrated knife (I used a bread knife – it worked a treat)

My Miracle Turns One!

Day 368 in my miracles life

WOW, i have a one year old… *sigh* before i know it i am going to have a little toddler!

I woke up yesterday, and instantly my heart sunk… The party in the park would have to be relocated…. :(

It rained, it poured, the sun didnt shine, not even a little bit… But you know what?

Hope knows the sun has risen even when the clouds cover every ray of light…

I guess yesterday showed me that even though things dont go to plan, they can still be amazing… And i mean UH-MAZ-ING…

There was so much love and fun, we were surrounded by so many loving family members i dont think it would have mattered if we were eating dirt at a dump… We just had so many special people surrounding us, spoiling my daughter i just know that our future will be nothing but wonderful.

My miracle was perfect, she is perfect, playing, laughing, enjoying all her friends and family…. The memories of her first birthday are going to be memories i will cherish forever and a day…

Even though i couldnt see it, the sun rose yesterday just as it had every other day in my life… And even though it was cloudy everything was just perfect… Much like my life ;)

Let the Baking Begin!

It has begun… My baking day for my baby’s first birthday party was the most fun i have had in some time! ( and i might just add consequently from all the tasting that ‘had’ to be done i am now on a 21 day cheat free diet )

Now the most complicated of them all would have to be the Lucy Cake… My precious little one has a doll we call Lucy and when deciding what her first birthday cake should be my step son, georges brother came up with the idea of a Lucy Cake! I dont think i ever would have thought of it if it wasnt for him – thanx josh!!

OK So first things first… I made a chocolate cake – ok thats a lie, i made three different sized chocolate cakes and boy oh boy was there A LOT of chocolate in these cakes!!!

I grabbed the recipe from Smitten Kitchen which you can find here, i used EXACTLY her recipe and i can tell you that the raw batter was to die for… IT WAS TO DIE FOR PEOPLES!!! And not only that once it was baked it was even more scrumptious, and i have to say if you are going to make a rich choclate cake… MAKE THIS ONE!!

Ok so once the cake was made and frozen (i kept it in the freezer for a few days so it stayed fresh while i was baking my other goodies) Anywho, on the day of the party i got the cake from the freezer and using the template i had created i simply cut out the peices while the cakes were still frozen as it made it much easier to cut :)

Then came the icing i made a simple royal icing by beating 4 egg whites, 1 teaspoon of lemon juice and a kilo of icing sugar (pure, not mixture) I split the batter into three and added black to one, yellow to another and left one white.  I got the colours from a specialty shop, they were like a concentrate so the colours came out much richer than the normal (cheaper) colours would have…

I then spent THREE HOURS, yup three whole hours icing and adding licorice hair to this thing!

Then, smarties for the cheeks to finish it off and VWALLA… One AWESOME birthday cake….

To my dearest little miracle,

How on earth did we get here, how did we get here so fast?

A year ago your father and i waited with baited breath, we tossed and we turned in our beds so excited to meet with you we couldnt sleep, we dressed in our gowns and scrubs and finally after so long, you were there with us in our arms. and the days that followed, the days that have made up the past 365, they have been everything we anticipated, everything we ever wished for… Magical, just magical.

The first time you smiled, the times we spent trying so hard for you to roll over on your own, the anticipation of your first time on all fours, the first time you crawled, your first step, the way your hair just kept growing and growing, the way you called me nan-nan instead of mum-mum…  The times i took you shopping and spent all dads money, the times your father walked through that door and you screeched in happiness to see him… The times you only wanted mum, where no one but mum was good enough for you, the times you were simply just content playing with wilma and your toys while occasionally just peering up at me to check that it was all ok and God Bless my soul – the times when as you lay in our bed between your father and i in the dark of the night and simply reached out for me holding my hand as if to say “i just need to make sure your still there mum”

My lovely, my sweet potato head, my always gorgeous george, you know so well how you got here, you know just how much we desired you, and you know that i would do anything for you, anything.  My precious i want you to know that when the clouds cover every ray of light, when it is stormy outside, george you are my sunshine, my hope, you are… You are why i know that the Lord above hears our prayers, you are my miracle – you are truly a miralce and i want you to know that i will love you for an eternity and more, i will love you with every beat of my heart, with everything that is inside of me, and no words, no words will ever convey the happiness you make me feel inside just for being who you are.

No matter what, my love for you is the deepest, most perfect love i have ever, ever felt, and george – you make my heart whole, you complete me, and you make me know that God is real, that miracles happen everyday.

I love you george, i honestly love you to the moon and back.

Let the Fairy Fun Begin!

Day 358 in my miracles life

I said i wasnt going to go over board… That may have been a lie…

Last weekend i began shopping for and making all the things i want to make for georges first birthday party… And i have to tell you that i was in heaven! I am just so excited that i have a baby girl, you have no idea how much i love pink, just how much fun i had painting with glitter, making a mess with pink paint!

If it is not clear by now we are having a Fairy Princess Party for my baby girl! And what sort of fairy princess party would it be if there wasnt any wands for magic?  No sort of party at all!

So my husband and i made wands, yes you heard right, we made fairy wands! SQUEE!! I cant wait to give them out at my our party!

I think i am more excited about this party than i have ever been about any party in my life! Can you believe a year has gone by so quickly?
